I did this kuih a few days ago. I've tried to make it once last week but it came out unsuccessful. The glutinous rice wasn't cook very well and the egg topping wasn't that sweet as I wanted. So, I tried to make it once again with a few alteration of the recipe and the result is in the picture above. Much better than the first time I did. Unfortunately my sister isn't at home coz' she love it very much!~ Here is the recipe :-
Pulut Seri Kaya
For the base :
2 cups of glutinous rice - soaked for 2 hours and toast.
1 1/2 cups of coconut milk
A pinch of salt
For the egg topping :
3 palm sugars
3 tbsp of white sugar
1/3 cup of water
Bring the glutinous rice, coconut milk and salt for a steam (in the baking pan). Steam for 20-25 minutes or untill cooked.
In different sauce pan, heat water, palm sugar and white sugar until dissolve. Off the heat.
Beat eggs a little and mix together with the sugar mixture. Beat until dissolve.
When the glutinous rice is done, press it with a spoon in the baking pan. Then pour the egg mixture and steam for about 15-20 minutes or untill cooked.
Let it cool and serve.
